Chicken Tortilla Soup

There is something about fall that just makes me crave Chicken Tortilla Soup! When I was in high school, my mom didn’t cook much. She was a single parent with a busy daughter, so I kind of fended for myself a lot when it came to food. However, when all my friends came over, she would always make a big pot of Chicken Tortilla Soup. I still remember 10 girls all sitting around slurping on soup.

My mom never wrote down a recipe, so when I went to college, I spent many years remaking soup from memory. Eventually, I got a recipe written down that I love and can recreate.

While my mom simmered a whole chicken nearly all day, I’m a busy mom myself, so I opt for pre-cooked rotisserie chicken and stock! I can also prep the bell peppers ahead of time when I’m cutting up veggies for my kids for the week, so the soup throws together really quickly.

Each batch typically makes about 8 cups of soup, and I freeze them in 2-cup Super Cubes so I can defrost and re-heat in individual portions. This has made it easy now that they make the Super Cube stoneware that can be microwaved and perfectly fits that frozen 2 cup.

Easy Chicken Tortilla Soup

This quick chicken tortilla soup recipe uses pre-made ingredients for a quick and easy delicious soup

Ingredients

  • 2 32 oz Chicken Stock
  • 2 cans Fire Roasted Tomatoes
  • 1 Rotisserie Chicken shredded
  • 3 bell peppers red, yellow & orange
  • 1/2 large onion diced
  • 1/2 Poblano pepper diced
  • 3 cloves garlic
  • 1 tbsp cumin
  • 2 tbsp chili powder
  • 1 lime
  • Julios Tortilla Chips
  • 1/4 cup grated cheddar cheese
  • 1/2 avocado sliced

Instructions

  • Saute onion, garlic, bell pepper and poblano until soft
  • Add chicken stock & tomatoes
  • Simmer for 15 minutes
  • Add shredded chicken and simmer another 15-20 min
  • Serve immediately with corn tortilla chips, sliced avocado, cheese and squeeze of lime.
  • Or let cool and then portion into 2 cup Souper Cubes (should make 4) to freeze
