Last Minute St. Patrick’s Day Party

In my house between Thanksgiving and March 17th it’s a barrage of birthdays, holidays and anniversaries. By the time my daughter’s birthday comes around on March 14th I’m so tired of planning events that I TOTALLY forget one of my favorite holidays… St. Patrick’s Day!

Since both my parents are Irish this has always been a big deal in my house growing up. Every year my mom calls and says “Are you having corned beef and cabbage today?” In the past 9 years I’ve said “no, I forgot, I was too busy with little girl’s birthday.” Not this YEAR! Walmart’s Online Pickup & Delivery makes it super easy to order online and have your last minute party supplies and food ready.

I know what you are thinking what about this last minute party! Since I really do liked corned beef, cabbage and potatoes (traditional St. Paddy’s day meal) I ordered this for my meal.

Since I want EASY for this festive meal I’m throwing it all in the crockpot! Now if you don’t have a crockpot, guess what you can even pick THAT up with the rest of your party supplies.

Here’s the recipe:

  • 3 carrots, cut into 3-inch pieces or 1 1/2 cups baby carrots
  • 1 small yellow onion, cut into 1-inch wedges (root end left intact) 
  • 1/2 pound small potatoes, halved if large 
  • 6 sprigs thyme 
  • 1 corned beef brisket (about 3 pounds), plus pickling spice packet
  • 1/2 head cabbage, cut into 1 1/2-inch wedges 

In a 5-to-6-quart slow cooker, place carrots, onion, potatoes, and thyme. Place corned beef, fat side up, on top of vegetables and sprinkle with pickling spice; add enough water to almost cover meat (4 to 6 cups). Cover and cook on high until corned beef is tender, 4 1/4 hours (or 8 1/2 hours on low). Arrange cabbage over corned beef, cover, and continue cooking until cabbage is tender, 45 minutes (or 1 1/2 hours on low). Thinly slice corned beef against the grain and serve with vegetables, cooking liquid, and mustard or horseradish sauce.

While the corned beef and cabbage is cooking I set up a set up fun cupcake decorating party for them. I love how easy it was to pickup not only my meal but all my party supplies in one trip.

Now that everything is here we are ready to blast some Irish music, put on our green shirts and have a festive afternoon at home.
